How much do you know about mold's effect on yukkuri?
I heard some comics explain that it causes tremendous and un-ceasing pain to yukkuri until death, but not enough to drive them mad.
Some say mold numbs their sensitivity on skin (likely to disable the muscles of locomotion) until its roots reach the core and kill the yu.
Some say it only makes the skin falls off which let the paste flow out, thus destroying the helpless pastry golem, because if we really complied with yu biology, bean paste usually converted almost everything into bean paste.
So I'm guessing that mold is the closest analog to cancer in the yukkuri world, right? I have to wonder what affect would UV germicidal light have on yukkuri mold, then. It could be akin to chemotherapy for battling certain types of mold.

In some setting, Yu mold is just harmful for yukkrui, and probably it's something very similar to the paste. So if you do that you may have a UV cooked yukkuri.
So, if I were to take it from a scientific approach, it'd just dry out their paste, until the roots hit the core and do.. whatever it'd do to the core (not exactly sure how the roots would affect it, since it vibrates and is like hard candy). I'm sure the mold isn't pleasant -- and, from most comics, is unpleasant and makes them itchy. It doesn't outright hurt, though.
The mold simply sets roots and spreads until it overcomes the core, it's not that hard to understand.
It's painful because it's slowly but constantly getting ingrained and hooked in their skin, innards and later their very core. Because of their nature as foodstuff pastry golems this would be specially lethal a great deal of the things we eat can easily go bad and grow mold.
Maybe you can argue that mold triggers something in the meta nature of yukkuris that usually wouldn't trigger being magical living foodstuff golems, but that would usually trigger if they were actually just normal foodstuff.
The capacity of going "bad" or "rotten", yukkuris even if they somehow reach old age and die from old, don't rot in any way or go bad, they just dry out and become a husk.
Mold meanwhile gives them back that real danger of going bad out of invasive infections and bad hygienic that kills off their magical preservation.
You can say that it's like a meta magical cancer that uses some biological aspects of mold to affect them but it's true damage is taking away the yukkuri's magical preservation capacity and instead be able to rot away and become even more infected.
Since at the end of the day if we ever see "rotten" yukkuris is because they had such horrendous living conditions or standards that invite mold to get a hold of them and start the decline.
I think there are no examples of mold happening in the wild were hygiene is better preserved, usually cities which aren't very yukkuri friendly. Yukkuris technically aren't creatures meant to any place but the truth is that the closest thing to "natural habitat" they have is the forest, cities just aren't as potentially "tolerating" habitat compared to the forest.
Moral of the story, this is the result of taking it too easy and not cleaning up properly so now mister mold reminds you your origin as the food stuff pastry golem you're and why you make sure to preserve and keep clean any food stuff item, if not they go "bad".

It doesn't contradict anything, the only thing that gets converted is anything "eaten", anything getting inside in any other way avoid that rule so they avoid that outcome.
Think like this, if it were like you said, any form of injection, ampoule, etc. that is used on yukkuris would never work because the content would be magically turned into more filling instead of being absorbed BY the filling for healing, enhancing or impregnating them.
Hell even the "Eat" rule has some limitations or exceptions based by author, like how any sort of flavour the type of yukkuri would consider "poison or toxic" is outright repelled (though not always avoiding it's effects) and worse, it triggers a very violent filling expulsion so no more filling is created instead it's a net loss. Another exception is how you can't just use yukkuris to force feed them plastic, chemical waste, etc. and convert it into filling. Many authors in the early days joked about yukkuris being used to deal with trash problems via nabbing them and in a typical cartoonish factory, constantly force feed them trash, but now a days that doesn't fly, the most they can do is with organic trash as in remains of food and such, basically the compost yukkuris.
So the whole "get inside and get converted" not only is limited to eating it's also far from absolute.
Besides mold had been a core aspect of yukkuris since ages and it fits them too well like to start arguing about how "it shouldn't happen".
