Not much different from taking the heads off of frozen shrimp, plucking off the legs, pulling the meat from the shell, and then making a cut to extract the guts.

I don't do any of that T_T
I just wash them, season them, and fry them in the pan :(
The only part I don't eat is the top of the headplate, because it has that big spike on it. And the mouthparts because they're kinda sharp.
